2 packages Cream Cheese
1 cup fresh lime juice
2 cups finely chopped fresh basil
1 cup finely chopped shallots
1 teaspoon balsamic vinegar
Sea Salt to taste
Crispet Canapé Crackers
Tiny shreds of shallot tops
Tiny shreds of pimento
Soften cream cheese in microwave then mix with lime juice, basil and shallots and balsamic vinegar. Sea Salt to taste. Refrigerate for three hours then dollop onto Crispet Crackers or any thin and crispy cracker. Top with a few shallot shreds or pimento.
(Never tell anyone how easy this is!)
1 bottle of decent champagne
1 large can pineapple rings
1 package Red Hots candies
Save the pineapple rings for another day, mix pineapple juice and bottle of champagne together, pour into champagne flutes, place glasses on tray. Drop one Red Hot into each glass and refrigerate for half an hour. Tastes delicious and looks like a tiny sunset!
